You can do almost anything you want with Photoshop. I don't know anything about Gimp. If you are trying to turn a colored pic into b%26w. Simply go to Image%26gt;Adjustments%26gt;Channel Mixer(click on monocromatic) or Image%26gt;Adjustments%26gt;Hue/Saturation and just turn the saturation down or open your Channels window and copy paste the Red,Green, and Blue channels into new corresponding layers.
To replace the color to red or blue you could go to Image%26gt;Adjustments%26gt;Replace Color. Then you just click on the color you want to change and pic a new one. It will replace it for you. You could use the color replacement tool under the brushes. You just paint over the old color with a new color of your choice. Also depending on what you want you could go to Image%26gt;Adjustments%26gt;Gradient Map. If you want to tint the color of the whole image at once Image%26gt;Adjustments%26gt;Photo Filter. Also to get more control you could Image%26gt;Adjustments%26gt;Variations.

Actually it is a better plan to shoot all your images with out any manipulation and then later using a photo program make any changes you want ... always saving the modified image as another name so you don't destroy the original file.
